    Abstract [en]

    Identification and clarification of relationships between product properties is fundamentally important in industrial product development. The process is however frequently perceived difficult. The presented research aims at clarifying if a visual tool can provide help in this work. The tool is a combination of previously known techniques and has so far been implemented at two product developing companies. Results and reactions from the tests are hitherto positive and the conclusion is therefore that this extended casual diagram can be a useful addition to the product developer’s toolbox.

    Abstract [en]

    In today's globally competitive market where the speed of change is increasing it is of great importance that manufacturing companies are striving to achieve improvements in their production systems resulting in competitive edge. One way of doing this is to strive for radical change by becoming more innovative. Today however, there's a lack of modern methods guiding companies to be not only innovative and creative in their production development process, but also increasingly more innovative while using it. Hence, the objective of this paper is to present and discuss a preliminary first draft of a Kaikaku realization method, primarily based upon Concept Modelling and research within the domains of Operations Management and Strategy, Innovation theory and Change theory. The result is a sequential work process that provides guidance from an initial “current state” of production to a more desirable “future state” based upon an aggressive target that is set in line with the production strategy. Finally, future research is discussed, implying that more research should be subjected to the actual work process as well as the main support provided in the process - aggressive target setting and facilitation of innovative thinking.

    Abstract [en]

    Assessment approaches in manufacturing companies has the potential of providing improvement potential issues. The purpose of this paper is to investigate potentials of an initial assessment approach of meetings in production. The assessment approach is based on a model regarding organization and information system structures, tested and validated in an industrial company in Sweden. Results show that the assessment approach could be used in order to evaluate what area to improve and what the company are strong within. The assessment approach also implies if the company are information-oriented or more organizational-oriented in their approach when creating meeting arenas. This could be used in future meeting strategies to improve the flexibility and value of the meetings. In further research, the next step is to develop, test, and validate a process for continuous improvement of meetings, as well as to apply the model for development of organization and information system structures in new scenarios such as ‘Personnel changes of positions and roles’, ‘Training and workplace learning’, and ‘Automation/digitalization’.

    Abstract [en]

    Proteins are important biopolymers that can contribute significantly to food structure. Controlling the manner in which they aggregate and form matrices within food systems is fundamental to sensory attributes and can have an impact on digestive properties. This work investigated the structuring behaviour whey protein isolate (WPI) over the entire acidic pH range from pH 1.0-6.8. WPI is a commercially available mixture of several proteins. β-lactoglobulin is most abundant and tends to dominate the functionality. Some important aspects are the clarity of protein solutions in beverages, the temperature of denaturation, the aggregation characteristics and consequently the gel forming properties. pH is a key factor which affects all of these properties and there remains aspects worthy of further investigation. In this presentation, the role of pH in denaturation, aggregation and structuring will be discussed in detail along with the trends observed. Some previously unknown aspects surrounding the behaviour of whey proteins at specific pH points and their applicability to commercial products will be highlighted

    The effect of oscillatory shear during heat-induced gelation of whey protein isolate has been investigated. For each gel sample, a single oscillating strain was applied during the gelation process from within the range of 0-1.0. A strain sweep was then used to evaluate the linear viscoelastic region as well as the fracturing properties of each gel. The application of strains lower than ∼0.01 during gelation did not affect the storage modulus while larger strains resulted in lower storage moduli in the linear viscoelastic region. Furthermore, gels produced under small (<0.01) strain amplitudes showed a single fracture point, while gels produced under high (>0.01) amplitude strain were characterised by a two-step fracture pattern. Between the fracture steps, strain hardening behaviour was observed. Confocal laser scanning microscopy was used to identify structural differences between the gels. Greater inhomogeneity was found in gels produced under large amplitude compared to small amplitude strain. It is suggested that localised redistribution of aggregates due to shear during gelation increases the average pore size and possibly creates two distinct types of aggregate structure with differing moduli. The combined effect of heating rate and oscillatory strain was also investigated. We postulate that the mechanism underlying our observations is generic to many gel systems.

    Human Impact on Safety of Shipping2018Report (Other academic)
    Abstract [en]

    Humans, especially the crews have an important role in the safe operation of ships. The crews, given the right circumstances are able to safely maneuver, navigate, maintain and operate the vessel. The crews are dependent on many factors that enable this work, from the design of the vessel and work place, the procedures, processes given by the ship management and the business approach the ship owner applies to the vessel.

    The traffic to and from Åland is an advanced transport system that enables safe ferry services in shipping fairways with narrow passages, meeting and crossing traffic as well as winter navigation - a shipping system combining people and technology to create safe transport.

    The introduction of more automation requires a systems perspective and will not be a straight forward development. Total autonomy as proposed by some technology developers is often neglecting the functions and roles that humans have on maritime safety and the business case for increased automation neglects the full contribution of humans onboard. Total autonomy will therefore require high-end products that are built on standardized complex systems. Controlling and monitoring these systems will set new requirements on operators to uphold situated understanding in these complex systems.

    Many aspects will be affected by increased automation towards smart shipping - regulations, organization, workplace, working methods, HMI, roles and skills. To cope with the foreseen changes it is important to develop further training, skills, experience, openness in the organization and familiarization giving the future crews the right pre-conditions to succeed in the future, as well as mindful design and integration of newly automated systems

    In the future, the ISM code will likely have to change to improve the interaction between land organisations and crews in order to facilitate better integration of split responsibilities and split physical locations by the management system which in the long run allows for an increased land-based monitoring and control

    of vessels’ systems and move certain tasks to shore to lower workload onboard, which should be one of the main drivers for automation.

    Tomato (Solanum lycopersycum L.) is one of the most important vegetables worldwide. As it is a relatively short duration crop and gives a high yield, it is economically attractive. Thus, the objective of this study was to evaluate the effect of drying method on the quality of the dried tomatoes based on three parameters viz; lycopene, ß-carotene and ascorbic acid contents. Thirty-six kilograms of tomatoes were sorted, cleaned, blanched and divided into three equal portions of 12 kg each. The tomatoes were sliced into 4, 6 and 8 mm, then sun, solar and hybrid dried, respectively. The value of lycopene content obtained for sun dried tomatoes ranged from 23.89 to 18.77 mg/100 g, solar dried ranged from 24.51 to 22.56 mg/100 g and hybrid dried ranged from 25.12 to 24.65 mg/100 g. The average value of β-carotene content obtained for sun dried tomatoes ranged from 4.12 to 3.72 mg/100 g, solar dried ranged from 4.94 to 4.25 mg/100 g and hybrid dried ranged from 4.98 to 4.65 mg/100 g. The values of ascorbic acid obtained for sun dried tomatoes ranged from 17.04 to 5.60 mg/100 g, solar dried ranged from 23.73 to 13.37 mg/100 g and hybrid dried ranged from 29.20 to 24.82 mg/100 g. Hybrid dried tomatoes slice showed higher retention of lycopene, ß-Carotene and ascorbic acid than both the solar and open sun dried methods.

    Sophisticated packaging solutions can be used in order to preserve vegetables during storage and transport. Polymeric films with selective barriers matching the respiration of the produce, thereby creating an ideal atmosphere inside the package, are available on the market. Fresh broccoli (Brassica oleracea L. var. italica 'Monterey') heads were packed in 4 different commercially available polymeric films, and stored at 4 and 10°C respectively. During storage the weight, colour, chlorophyll content and texture were monitored. The investigated polymer materials were oriented polypropylene (OPP), polyvinyl chloride (PVC) and two types of polyethylene (PE) packagings. The choice of packaging material had an impact on the measured quality parameters of broccoli. Storage in OPP resulted in the longest storage life. Broccoli stored in PVC film deteriorated faster than broccoli packaged in the other materials. It was also observed that the influence of the type of packaging material was more important at the higher temperature. The implications of this work for the packaging and storage of fresh broccoli will be discussed.

    Three different commercially available polymeric films were studied to determine their effect on the sensory properties of fresh broccoli (Brassica oleracea L. var. Italica cv. 'Marathon'). The polymer materials investigated were oriented polypropylene (OPP), polyvinyl chloride (PVC) and one low density polyethylene (LDPE) which contained an ethylene absorber. The fresh broccoli was packaged and stored for one week at 10°C or 3 days at 4°C followed by 4 days at 10°C. The oxygen and carbon dioxide concentrations inside the packages were monitored during storage. After storage the broccoli was evaluated according to sensory analyses, i.e. triangle test and quantitative descriptive analysis, by an analytical panel. The panel judged the broccoli according to smell, taste, texture and appearance. The triangle test showed significant differences between the smell of the broccoli samples, stored in the different packaging materials, when cooked. However, no differences between the raw broccoli, stored in the different packaging materials could be detected. The quantitative descriptive analysis showed that the following attributes; fresh smell and taste, chewing resistance, and crispness, differed significantly between the packaged broccoli when cooked. The appearance was shown to be the sensory property of broccoli most affected by the storage conditions, i.e. packaging material used and storage temperature. The results indicated the importance of the packaging material for maintaining the broccoli quality. However, one packaging material that was able to maintain all the studied sensory properties could not be identified. Copyright © ISHS 2003.

    Utvärdering av innpvativ värmeväxlare i kyldisk: för effektivare energianvändning i butiker2018Report (Other academic)
    Abstract [en]

    In this study, a new innovative type of air-to-liquid heat exchanger, called HEALEX (which stands for High Efficiency Air to Liquid Heat Exchanger), has been tested and demonstrated in an open display cabinet at a supermarket. HEALEX is adapted for obtaining good heat transfer performance even at a laminar flow regime on the liquid side, which is often the case in indirect cooling systems in supermarkets. The heat exchanger consists of parallel plates, with liquid in every second passage and air in the other passages. The purpose of the demonstration was to show the potential of increasing the energy efficiency by replacing the conventional cooling coils by HEALEX. On the long term, the purpose of the project was to raise the interest and acceptance for this type of heat exchanger, and through raised acceptance increase the amount of energy efficient heat exchangers in supermarkets, which in turn would result in energy savings.

    One of the objectives of the project was to confirm results from a previous study where tests had been performed in a laboratory. The results from the laboratory tests showed that the same cooling capacity and average temperature of the “food packages” could be obtained with around 6 K higher inlet temperature of the liquid, -7°C with the traditional coil and ‑1°C with HEALEX.

    The project was not intended to directly compare the performance of the original heat exchanger and the one of HEALEX regarding efficiency. A field study is not well suited for direct comparisons of different heat exchanger performances, since there are too many hard-to-control variables (ambient climate, customer behavior etc.) that affect the performance of the cooling system. Studies for direct and exact comparisons should always be carried out in a laboratory, where parameters that affect the result can be controlled.

    The first tests were made with the original heat exchanger placed in the bottom of the display cabinet, and thereafter the heat exchanger was replaced with HEALEX. The data collected in the project were air- and liquid temperatures before and after the heat exchangers, air temperatures and humidities in the display cabinet, liquid and air pressure drop and liquid volume flow. Temperature and humidity of the ambient air is also measured.

    The results from this study show that there is a potential of energy savings by using HEALEX in display cabinets at supermarkets instead of conventional cooling coils. The inlet temperature of the secondary refrigerant could be raised 6°C after the installation of HEALEX and almost the same cooling capacity and average temperature in the display cabinet as for the original heat exchanger could be obtained. These results confirm to a large extent the results from the laboratory tests.

    The results from this study also indicate that the need for defrosting will occur much more seldom for HEALEX compared to a conventional cooling coil. Defrosting was initiated by time control at 6.00 am and at 7.00 pm. Since the pressure drop is constant during the measurement period it is likely that there is no frosting and thereby no need for defrosting. In order to find out if defrosting is needed or not, the it would have been necessary to increase the intervals between the defrosts, which was not possible in this study.

    Earlier studies have shown that COP increase with approximately 2.5% per oC increased liquid temperature. Thereby an increase of the liquid temperature with 6oC implies energy savings of about 15% for the compressor drive energy.

    Freezing is an efficient and widely used method of food preservation. However, it can also cause irreversible damages at cellular level which in turn degrade the overall quality of the frozen food products. Therefore, qualitative and quantitative methods and technologies that will be able to evaluate with accuracy the freeze damage are of great importance. This review paper provides a comprehensive study of the methods that have been used to evaluate the freeze damage in fruits and vegetables. Further than the principles and the applications of those methods, the advantages and the limitations are also being discussed. © 2018 Elsevier Ltd

    Ice nucleation is a stochastic process and it is very difficult to be controlled. Freezing technologies and more specifically crystallisation assisted by magnetic, electric and electromagnetic fields have the capability to interact with nucleation. Static magnetic field (SMF) may affect matter crystallisation; however, this is still under debate in the literature. Static electric field (SEF) has a significant effect on crystallisation; this has been evidenced experimentally and confirmed by the theory. Oscillating magnetic field induces an oscillating electric field and is also expected to interact with water crystallisation. Oscillating electromagnetic fields interact with water, perturb and even disrupt hydrogen bonds, which in turn are thought to increase the degree of supercooling and to generate numerous fine ice crystals. Based on the literature, it seems that the frequency has an influence on the above-mentioned phenomena. This review article summarizes the fundamentals of freezing under magnetic, electric and electromagnetic fields, as well as their applicability and potentials within the food industry.

    Det blir alltmer uppenbart att vi behöver vara rädda om vår jord. Miljöfrågorna startade med debatten om kvicksilver och DDT och handlade sedan om direkta utsläpp från fabriker. Idag inser vi vikten av att sätta produkten i centrum. Att förbättra produktens egenskaper under hela livscykeln är centralt för ett framgångsrikt miljöarbete. Produktutvecklare är en av de grupper som har störst möjlighet att påverka denna utveckling i en positiv riktning. Många lösningar ger – förutom bättre miljö – dessutom ökat kundvärde till lägre kostnader. Bra miljö genom ekodesign är ett nytt sätt att tänka. Denna bok ger vägledning i hur man kan integrera miljöaspekter i produktutvecklingen. Boken visar också ett antal verktyg, checklistor och exempel på ekodesign i företag. Boken vänder sig i första hand till produktutvecklare och konstruktörer men också till företagsledning, inköpsavdelning, marknadsförare och miljöansvariga. Dessutom lämpar sig boken väl för undervisning inom ekodesign.

    This paper reports on a special pilot coating and industrial printing trial designed to gain fundamental knowledge on ink adhesion failure on coated papers. We found that ink adhesion failure resulted in white spots without ink on the paper, referred to as uncovered areas and these spots gave print mottle problems. The white spots were due to two fundamentally different types of ink adhesion failure. One is the well-known ink rejection, which simply means that ink is not transferred to the surface. The other is a new type of ink adhesion failure, confirming a previous hypothesis suggested from laboratory observations. We refer to this as ink-lift-off adhesion failure, meaning that ink initially deposited on the paper surface becomes lifted off from the surface in a subsequent print unit. Adhesion failure by this mechanism was seen to occur more frequently than failure due to the well-known ink rejection.

    In many fields the concept and measurement of quality is of prime importance. The fish industry is no exception to this and many sensory approaches have been devised to quantify this rather intangible property. The EU 5th framework project 'SEQUID' has concentrated on the measurement of the dielectric properties of fish tissue as a function of time both in frozen and chilled storage. The many deteriorative biochemical and microbiological processes that take place during the gradual spoilage of such materials have a subtle influence on the dielectric properties across the spectrum but notably in the microwave frequency region. In this region the complex interactions of water, solutes and structure-forming proteins are systematically changed by death and decay. Chilling or freezing may slow these processes but such preservation techniques do not halt them entirely. The SEQUID project has shown that it is possible, using a combination of time domain reflectometry and multivariate analysis, to predict certain quality-related variables, both sensory and biochemical, with comparable accuracy to existing methods. These results are presented in this paper. © 2007 IOP Publishing Ltd.

    The temporary constructions industry has cost efficiency and sustainability challenges that may require new innovative business models as well as product and processes. This paperaims to discuss how social sustainability services can be included in product service system (PSS)by investigating a case where employment is offered in distributed temporary building module manufacturing in the PSS context. The case has been evaluated against PSS literature. Recent reviews and literature on inclusion of social sustainability and PSS for buildings were used. It is concluded that the current concept fits basic definitions of PSS although it is not typical. The social value of employment is difficult to evaluate and inclusion in PSS needs further research. Design practice could be used to further develop the services in the studied concept. © 2017 The Authors.

    From a product service systems business model development perspective, this paper presents a case study of Västra Mälardalens industrial symbiosis, its maturity level and potentials for further development. The status and potentials of the symbiosis network, based on a survey, interviews and workshops, together with background statistics, is used to evaluate the potential improvement areas and suggest future research. The study contributes with application of evaluation models and confirms earlier research and in addition suggests future research in the field. The Symbiosis network has potential to be acting as innovation catalyst supporting companies to go beyond core business development.

    This paper explores the concept of Critical Infrastructure (CI) resilience and its relationship with current Risk Assessment (RA) processes. It proposes a framework for resilience assessment of CI, which integrates the resilience paradigm into the RA process according to ISO 31000. The framework consists of three levels, namely (a) asset (focus on individual CI assets), (b) system (focus on dependencies between CI assets) and (c) national or regional (focus on societal aspects). It is applicable to individual CI or their combinations, accounting both for existing RA processes, for interdependencies and their effect on interconnected CI, while at the same time employing current, available resilience analysis tools and methodologies. This approach is also compatible with the current European guidelines for national RA applied by the EU Member States. © 2017 Taylor & Francis Group, London.

    The perception of texture has been correlated to the micro-structure of particulate whey protein gels. A full, two-level, factorial experimental design was used in which the processing conditions, pH, heating rate and addition of salt were used as design factors. The texture of the gels was analyzed by a sensory panel, and the microstructure was analysed by light and electron microscopy. The microstructure was quantified by using different types of image analysis. In this study of particulate whey protein gels, the test principles of analysing texture were divided into two groups: destructive tests and non-destructive tests. The micro-structural parameters can also be divided into two groups: overall network dimensions (pore size and particle size) and strand characteristics. The texture as measured with destructive methods was sensitive to overall network dimensions, whereas texture as measured with non-destructive methods was sensitive to the strand characteristics of particulate protein gels.

    Safety issues concerning the use of large lithium-ion (Li-ion) batteries in electrified vehicles are discussed based on the abuse test results of Li-ion cells together with safety devices for cells. The presented abuse tests are: overcharge, short circuit, propane fire test and external heating test (oven). It was found that in a fire, cells with higher state of charge (SOC) gave a higher heat release rate (HRR), while the total heat release (THR) had a lower correlation with SOC. One fire test resulted in a hazardous projectile from a cylindrical cell. In the fire tests, toxic gas emissions of hydrogen fluoride (HF) were measured for 100%, 50% and 0% SOC.

    The influence of electroplating parameters on throwing power (TP) is studied in additive-free silver cyanide solutions under direct current and pulse reverse electroplating conditions. It is found that the best TP is obtained when no agitation of the electrolyte is applied. The most important parameters for controlling the TP are the cathodic current density, the anodic to cathodic charge ratio, and the ratio between the anodic and cathodic current densities. Guidelines for process optimisation are given.

    Syftet med detta projekt har varit att ge ökad kunskap kring olika förekommande brandrisker och råd om hur dessa kan reduceras med olika åtgärder, primärt baserat på praktiska erfarenheter från genomfört säkerhetsarbete samt uppkomna bränder ute i olika anläggningar. Målet är att de samlade kunskaperna och erfarenheterna kan komma till nytta för hela branschen, övriga berörda intressenter och myndigheter och på sikt ligga till grund för t.ex. framtida branschrekommendationer.

    Projektet kan delas in metodmässigt i; statistik, workshoppar samt analys av anläggningsspecifik information.

    Analysen av insatsstatistik från Myndigheten för samhällsskydd och beredskap (MSB) pekar på att det inträffar i storleksordningen 60–70 bränder årligen i avfallsanläggningar och att brandorsaken i de flesta fall är självantändning eller okänd anledning. Tittar man på "brand ej i byggnad" med relevanta bränder för avfallsanläggningar så ser man en svagt ökande trend i antal bränder 2012–2015. 

    De vanligaste materialfraktionerna som enligt statistik från MSB är kopplade till bränder i avfallsanläggningar är sopor, kompost, fluff, papper, trädgårdsavfall, däckgranulat, annat, skrot, återvinningscontainrar. Även en del av flisbränderna kan vara relaterade till RT-trä.

    Från avfallsindustrins sida ansågs bark, returträ, flisat material och GROT (grenar och toppar) kunna ge problem med självuppvärmning. Även krossning av avfall angavs som ett generellt problem av flera deltagare.

    Många incidenter och bränder anses bero på felsorterat eller feldeklarerat avfall och kontrollen av inkommande gods är därför väldigt viktig. Det är också viktigt att kommunicera uppströms i leveranskedjan för att öka chanserna att komma tillrätta med problemen. Många deltagare identifierade batterier (speciellt litiumbatterier) som ett växande problem.

    Hanteringen av förorenat släckvatten varierar mycket. Man påpekar att samma krav över hela landet vore bra. Man önskar tydligare riktlinjer för släckvattenanalyser, kunskap om vad vattnet kan innehålla och information om reningsmetoder för släckvatten.

    Det påpekas att det finns många standarder och normer att förhålla sig till så det vore därför bra att ha en lägsta nivå av krav som bestäms i samarbete med branschen som man kan förhålla sig till och någon form av vägledning från myndigheterna för göra hanteringen mer lik över riket.

    Diskussionerna under workshopparna och tillsammans med projektets referensgrupp har lett fram till 33 rekommendationer uppdelade på olika områden. För varje rekommendation ges i rapporten ytterligare förklaringar. Dessa rekommendationer kan ligga till grund för framtida riktlinjer.

    An LCA of organic potatoes cultivated in southern Sweden was carried out to gain more knowledge about the environmental impact and resource use along the food chain. Life Cycle Assessment (LCA) is a method for analysis and assessment of the potential environmental impact caused by products (ISO 14040). Included in the study were the production of inputs to agriculture, agricultural production, sorting and packaging, distribution and the household phase. The use of energy, water and other resources were also included as well as basic environmental impact categories such as global warming, acidification, eutrophication, toxicity, ozone depletion and photo-oxidant formation. A major finding was that the agricultural production accounted for almost all the emissions contributing to eutrophication and acidification. Other findings were that agricultural production, production of packaging materials and the household phase were the main contributors to global warming, while the energy use was rather evenly distributed among the life cycle stages. The primary improvement options identified in the study were to reduce nitrogen emissions contributing to acidification and eutrophication and to reduce potato losses due to poor quality. The organic potato yields are generally very low, typically about 60% of the conventional levels. Increased yields would be beneficial from an environmental point of view.

    LED lighting solutions sometimes give rise to optical flicker. In most cases, the temporal modulations are too fast to be perceived directly, but may still be noticed through stroboscopic effects. We report on an investigation on how people experience the lighting in an office where two LED lamps are modulated separately with different frequencies. The test subjects performed tasks for evaluation of perception, attention and reaction time. The subjects are found to be affected by the modulated light as the reaction times are shorter and the attention test scores are higher in modulated lighting compared to constant lighting. Furthermore, the study confirms that the stroboscopic effect depends on the nature of the tasks and that it is more easily perceived at lower frequencies but noticed up to at least 400 Hz.

    In the past, environmental activities in the food industry used to be focused on meeting the requirements set by authorities on waste and sewage disposal and, more recently, regarding emissions to air. Today environmental issues are considered an essential part of the corporate image in progressive food industries. To avoid sub-optimization, food waste management should involve assessing the environmental impact of the whole food chain. Life cycle assessment (LCA) is an ISO-standardized method to assess the environmental impact of a food product. It evaluates the resources used to perform the different activities through the chain of production from raw material to the user step. It also summarizes the emission/waste to air, water, and land from the same activities throughout the chain. These emissions are then related to the major environmental concerns such as eutrophication, acidification, and ecotoxicity, the factors most relevant for the food sector. The food industry uses the LCAs to identify the steps in the food chain that have the largest impact on the environment in order to target the improvement efforts. It is then used to choose among alternatives in the selection of raw materials, packaging material, and other inputs as well as waste management strategies. A large number of food production chains have been assessed by LCAs over the years. This will be exemplified by a comparison of the environmental impact of ecologically grown raw materials to those conventionally grown. Today LCA is often integrated into process and product development, for example, in a project for reduction of water usage and waste valorization in a diversified dairy.

    A study was conducted that demonstrated that the blending of edible oils leads to changes in surface tension, thermal properties, viscosity, and oil penetration times through a barrier-coated paperboard. The results emphasize the significance of testing the oil and grease resistance (OGR) oil blends in order-to verify the suitability of the packaging material for real-life end-use applications. The results of the OGR determinations suggest that hydroxypropylated-starch-based composite coatings containing an oleophilic high aspect ratio mineral can be tailored for food shaving different fatty acid compositions by varying the pigmentation level. Compared to standard OGR tests, confocal laser scanning microscopy (CLSM)-based techniques make it possible to evaluate the oil penetration time and its diffusion behavior very accurately, both inside the coating layer and in the bulk matrix. It was found that, at room temperature, coconut oil tends to crystallize inside the substrate, inducing swelling of the coating layer, which probably has an influence on the physicomechanical properties of the packaging material.

    Introduction "Food and drink" products are the basis of life. However, it is recognised that their supply also contributes to the environmental impacts associated with production and consumption. Recently, an increasing number of food chain partners and public authorities have introduced a widening range of initiatives to provide information about the environmental performance of food and drink products. These initiatives show a high degree of diversity in terms of their chosen scope, assessment methodologies and means of communication, which has the potential to confuse or even mislead consumers and other stakeholders. In this context, the European Food Sustainable Consumption and Production (SCP) Round Table was launched by food supply chain partners and the European Commission with the vision of promoting a science-based, coherent approach to sustainable consumption and production in the European food sector. Objectives This article presents this European initiative by introducing its Guiding Principles and summarizing the proceedings of the scientific workshop held in Ispra on 14-15 June 2010. The aim of the workshop was to identify scientific inputs for developing the harmonised framework methodology for assessing the environmental issues of food and drink products. In this context, the main purpose was to provide a common understanding of what is involved in reliable and robust environmental assessments of the food chain, current limitations, and how to go from detailed assessments to more focused criteria, guidance and tools. Conclusion The current experiences presented in the workshop demonstrate that much advancement has already been made towards the measurement and management of the environmental performance of food and drink products. Detailed methodologies and tools are already being used by various players. According to the workshop speakers, the definition of methodological choices concerning the functional unit, systemboundaries, cut-off criteria, allocation rules and environmental impact categories are some of the key issues to be fixed in the harmonised framework methodology. The Round Table process has the potential to make a substantial contribution to the sustainable consumption and production of food and drink products. This model might be proposed and reiterated for other sectors as well. © Springer-Verlag 2011.

    A pilot-scale process for continuous in-flow microwave processing of foods, designed and implemented at SP Food and Bioscience, was evaluated for heat treatment of a homogeneous model food for high-temperature short-time (HTST) conditions, at constant total input microwave power, at 2450 MHz. The microwave system has three consecutive cavities, one excited by the TM020 microwave mode that heats primarily in the tube centre, and two TM120 mode cavities that heat primarily in the tube periphery. The temperature uniformity of the homogeneous model food after microwave heating is here evaluated in terms of spatial distribution, for different set-ups of input microwave power in each cavity and for different order of the placement of the cavities, while maintaining the total input microwave power. The microwave heating uniformity is evaluated, based on measured and calculated radial temperature profiles. Combined TM020 and TM120 heating was found to result in more uniform heating by means of spatial temperature uniformity over the tube cross section. Furthermore, appropriately selected microwave power distribution between the centre and periphery heating cavities results in a stable heating profile in the studied food, that differs only about 10 °C or less between highest and lowest average values directly after microwave heating.
